WooCommerce numbers orders by database ID: 1503, then 1507, then 1512. Accountants, tax offices and invoicing rules expect a sequence. Gatemi Sequential Order Numbers gives every new order the next number in a gap-free sequence — atomically, so two orders placed in the same instant can never draw the same number.
A number is assigned once and never changes. It is frozen onto the order the moment the order is created. Orders placed before this plugin keep the numbers they always had, and disabling the plugin never renumbers anything.
